Vegan Plum Cardamom Sauce

Season changes.

Plum Cadamom Sauce has been for all my autumn/fall bakes and desserts. I started with my fall bakes, but I still do not want to let go of summer though. However, I look forward to fully transitioning myself in the kitchen and be ready for all the splendid fall flavors. The vegan plum cardamom sauce is like a seasonal transition, you know, where fall is almost here, but summer is still not gone completely. Using the late summer, early fall fruit, and combining some of the spicy deep flavors- makes a very delicious vibrant sauce. I have been playing with apples and pumpkins in my kitchen. And I cant wait to share some of the vegan and non vegan bakes with you. 

The winds have started to get gusty and I can feel the chill in the air. The leaves have already started to change colors but there are still deep green leaves left that are yet to change. This transition from summer to fall is absolutely magical and anything magical has to be celebrated. Or rather I would say, that each season needs to be celebrated with a good bye and a welcome treat. What’s better than to combine the flavors from both seasons and enjoy them for the rest of the season.

It will be so exciting. Looking forward for some apple bakes. The first thing I wanna make is apple chai spice cake from last year. That was one delicious festive cake. If you haven’t tried it yet, then you should bake it this year. You will not be disappointed. 

I have been stocking up on a few quick and easy sauces for the desserts. I made a Bourbon Saffron Caramel Sauce which was beyond delicious. The recipe is on my Instagram feed on the caramel post. Pouring a scrumptious sauce on any dessert or loafs is the easiest way to dress them up formally and to add lots of flavor to any dish. I have been doing vegan and gluten free bakes a lot lately, and decided to do this Plum sauce completely vegan. Plums range from sweet to tart flavor and when grilled or cooked their sweet and tart flavor enhances. As I mentioned before in my Apricot tart post, the flavor of all stone fruit gets better when grilled, baked or cooked. 

The Best of Seasonal Flavors

The in-between season is the best time to stock up on some of the best flavors that two seasons have to offer. This plum sauce is full of seasonal flavors. Plums are end of summer fruit but stay until mid fall to early winters. They are so juicy, and delicious. Sometimes I feel berries are my favorite fruits, until the stone fruits start to show up in the market and I go all out with them. 

For this sauce, I wanted to add the tartness, and so I didn’t discard the plum’s skin. To add the earthy and autumn notes to the sauce, I added some cinnamon and whole green cardamom while cooking. Don’t worry about crushing the spices to bring out more flavor, as it will all get blended later and add lots of flavor in the sauce. I also added rum in the sauce to give deep and warm notes. Rum makes every dessert better, right? It’s one of those drinks that in my opinion, is a must in all festive bakes, crazy right? It is so awesome you should try it. Moving on, of course, there has to be citrusy notes to bring out the flavors even more. For that I added oranges, to add a festive citrusy touch. You know me,  I’m big on herbs most of my cooking is incomplete without the addition of fresh herbs. They add a lot of aroma in the dish, so I added some rosemary. As expected it added a lot of woody aroma in the sauce. And made everything taste so autumnal. But you could do thyme or even without the herbs all together. 

Have Fun with your Sauce

It’s one the easiest and scrumptious sauce to make. The vibrant deep red color from the plums is literally to die for. Add this warm sauce on top of your ice cream, or cold sauce on top of a  warm pumpkin loaf, of even your cookies. Whichever way you choose to do it just have fun. It sure will add a lot of flavor, and a gorgeous red festive color on your dish. I will not right a huge post this time, as I will go and get some more flavors tested for you all to enjoy. I will leave the recipe below for this scrummy beautiful sauce for you to make. Make ahead and freeze it. You will thank me later.

Vegan Plum Cardamom Sauce

Ingredients
  • 500 grams Plums deseeded
  • 25 gramsSugar
  • 5 Green cardamom pods
  • An inch of cinnamon stick
  • 1 tsp Rosemary
  • 15 ml Orange juice
  • Squeezed orange peel
  • 1 tbspRum
  • 50-75 ml Water
Instructions
  1. Take a heavy bottom wide pan and heat on medium heat.
  2. Cut the plums in quarter and take the seed out.
  3. Add all the ingredients in the pan without rum
  4. Cook on low medium to low heat until the plums get softened and mushy. This might take 15-30 minutes depending on the ripeness of the fruit.
  5. Now add all this to a heavy duty blender and blend until very smooth consistency.
  6. Transfer this sauce into the pan and adjust the consistency by adding more water if required.
  7. Than add the rum and cook on low heat for another 4-5 minutes. If you added more water then cook for till water is cooked through fully. It should be considerable consistency but not too thin like water or not too thick like jam.
  8. Take it off the heat and let it cool completely. Transfer the sauce into the sterilized jar and store in refrigerator for about a week. Freeze for longer storing time.

    Oh, Esha this is so very beautiful. I commented on it over on Instagram and was looking forward to seeing the recipe. I’ve got homegrown plums and would love to make it to go with a sourdough plum cake I am making for a nutrition class tomorrow – minus the rum if that’s okay!
